Born in Mexico City and raised in Tijuana, Gutierrez has completed various films and paintings about Mexican culture. Under Jules Engel, he received both a bachelor and masters degrees from the California Institute of the Arts. He was the creator of "Carmelo", the award winning animated film starring wooden folk art dolls. "Carmelo" won first prize in the Computer Animation category of the Academy of Television Arts & Sciences College Awards, and has been screened at various festivals around the world, including Kodak's Emerging Filmmakers Program at the 2001 Cannes Film Festival. In 2000, Gutierrez worked under animation legend Maurice Noble, for the art direction of Chuck Jones' Timberwolf, for Warner Brothers.

In 2001, Gutierrez began creating Jorge R. Gutierrez' "El Macho", an animated web series for Sony Pictures Digital Entertainment on Screenblast.com.
